Buggy Pasta Recipe
Ingredients:
4 oz of spaghetti
4 oz of Fussili pasta
1 pc of squash (yellow, medium); halved lengthwise the sliced (or zucchini)
1 c of cherry tomatoes (small)
1 c of pea pods (fresh, discard strings and tips)
1 c of olives (ripe); pitted
1 c of olives (pimiento stuffed)
1 c of cheese/smoked cheese (Cheddar, 4 oz); cubed
1 c of almonds (whole, unblanched); toasted
1/2 c of scallions; sliced thinly
1 bottle of salad dressing (8 oz, regular/nonfat, Italian)
Instructions:
Cook the two types of pasta as stated in the package instructions. Drain then rinse; drain them again. Combine together pasta, squash, tomatoes, pea pods, olives, pimiento-stuffed olives, cheese, and almonds. Mix well.
Add the dressing and toss. Cover tightly and place inside the refrigerator for a day.
