Pumpkin Soup Recipe
Ingredients:
3 Tbsps of softened margarine
1 Tbsp of sugar (brown)
1/4 tsp of cinnamon (ground)
4 pcs of bread slices (whole wheat)
1 c of onion; chopped
2 Tbsps of melted butter
1 tsp of salt
14 1/2 oz of chicken broth (canned)
15 oz of pumpkin puree (canned)
1/4 tsp of cinnamon (ground)
1/8 tsp of ginger (ground)
1/8 tsp of black pepper (ground)
1 c of whipping cream (heavy)
Cinnamon croutons
Instructions:
Preheat the oven at (400 degrees F).
Combine sugar, cinnamon, and butter then spread evenly on bread (only on one side). Place the buttered bread on the cooking sheet, with the buttered face up.
Bake for 8-10 mins until the bread has crisped and the butter is bubbling. Cut one slice bread to eight squares or triangles (making 32 pcs).
Saute the onion with butter inside a saucepan till tender then add half the broth. Mix thoroughly and let it boil. Once boiling, cover the saucepan and reduce the heat; let it simmer for fifteen mins.
Transfer the mixture inside a processor and process till smooth. Place it back on the saucepan and add the rest of the broth, salt, cinnamon, ginger, pepper, and pumpkin.
Stir thoroughly and let it boil. Once boiling, cover the saucepan and reduce the heat; let it simmer for ten mins while stirring frequently.
Add in the cream; stir until heated well, don’t boil. Serve with croutons.

Pumpkin Soup with Fennel and Leeks Recipe
Ingredients:
2 Tbsps of cream butter (sweet)
6 ozs of leeks (only the white portion); sliced thinly
1/2 c of fennel (fresh, or substitute with anise); chopped
4 ozs of carrots; sliced thinly
2 Tbsps of ginger (fresh); minced
1 tsp of paprika
1/8 tsp of allspice (ground)
1/2 tsp of dried savory
1/4 tsp of nutmeg (ground)
32 oz of chicken broth
15 oz of pumpkin (canned)
Salt
Pepper (white, ground)
Whipped cream (or steamed milk)
Nutmeg (freshly-ground)
Instructions:
Melt the butter inside a saucepan above moderate heat then add fennel, leek, ginger, and carrot. Cook while stirring constantly till leek becomes limp and slightly brown or about ten mins.
Add savory, paprika, nutmeg, and allspice. Add (1 cup) broth then let it boil. Once boiling, cover the saucepan and reduce the heat. Continue to boil until carrots soften.
Transfer the mixture on a processor. process to puree. Place the puree back in the saucepan and add the rest of the broth and pumpkin; stir thoroughly.
Let it boil above moderately high heat. Once boiling, cover the saucepan and let it simmer, about ten mins. Season with pepper and salt. Serve.

Pumpkin Pancakes Recipe
Ingredients:
2 Tbsps of sugar (brown)
1 tsp of allspice
1/2 c of pumpkin
1 1/2 c of evaporated filled milk
2 tsps of cinnamon
2 Tbsps of vegetable oil (or canola oil)
2 pcs of eggs (fresh)
1 tsp of vanilla
2 c of Bisquick
Instructions:
Combine sugar, Bisquick, cinnamon, allspice, and sugar inside a bowl. Add milk, eggs, pumpkin, vanilla, and oil. Beat thoroughly until it becomes smooth. Pour (1/2 cup) batter on the pan.
Cook till the edges dry up and top isn’t bubbly anymore. Flip the pancakes. Continue cooking until it is slightly golden. Serve together with honey or syrup.

Pumpkin Pie Recipe
Ingredients:
2 pieces of eggs; beaten slightly
3/4 cup of sugar (white)
2 cups of pumpkin (canned)
1 teaspoon of cinnamon (ground)
1/2 teaspoon of ginger (ground)
1/4 teaspoon of cloves (ground)
1 2/3 cups of evaporated filled milk
1/2 teaspoon of salt
1/2 teaspoon of allspice
9 inch pie crust (ready made)
Instructions:
Combine the eggs, sugar, pumpkin, cinnamon, ginger, cloves, salt, milk, and allspice in a bowl. Mix thoroughly. Pour onto the crust.
Bake at 350 degrees F for forty-five mins. Take out from oven and let it cool. Serve it with whip cream.

Pumpkin Veggie Bowl Recipe

Instructions:
Open the pumpkin, cut its top part in jagged-design. Clean it by removing the flesh and seeds inside. Place the vegetables inside. Serve with dips.
