Hearty Halloween Soup Recipe
Ingredients:
1 lb of turkey; ground
1 c of celery, coarsely chopped
1 tsp of soup base (chicken, or use bouillon granules)
1 pc of onion; coarsely chopped
6 c of water
1/8 tsp of basil
1 c of potato (red); diced
1 pc of bay leaf
2 Tbsps of parsley; coarsely chopped
6 c of tomatoes; cubed
2 Tbsps of flour (all-purpose)
1/2 tsp of thyme
1 c of water (warm)
2 c of vermicelli; broken
Instructions:
Combine celery, onion as well as turkey using kettle then cook ’til vegetables become soft. Then, drain the mixture. Add flour (dissolved in 1 c of water), tomatoes, thyme, parsley, basil, bay leaf, potatoes, soup base and 6 c of water.
Simmer the mixture for a minute while covered ’til cooked then add the vermicelli noodles and let simmer ’til cooked (10 minutes). This recipe creates 16 serving portions.
