Pumpkin Bread Recipe
Ingredients:
2 c of sugar (white)
1 c of vegetable oil (or canola oil)
4 pcs of eggs (large)
2 c of sifted flour (all-purpose)
2 tsps of baking soda (Arm & Hammer)
2 tsps of cinnamon (ground)
1/2 tsp of ginger (ground)
1/2 tsp of salt
1 tsp of baking powder (Calumet)
2 c of pumpkin puree (cooked mashed pumpkin)
1/2 c of pecans; chopped
For the frosting:
1/4 c of butter (unsalted)
8 oz of cream cheese; softened
1 lb of sifted powdered sugar
2 tsps of vanilla
Instructions:
Grease two 9 inch round (cake) pans and dust a little flour.
Combine oil, eggs, and sugar on a bowl then blend well. Combine flour, soda, cinnamon, ginger, baking powder, and salt; mix into the oil mix. Beat thoroughly. Add the puree.
Transfer the batter onto the pans. Place inside the oven and bake for forty mins (350 degrees F). Let it cool.
To make the frosting, combine butter, cream cheese, powdered sugar, and vanilla inside a bowl then beat thoroughly until it becomes smooth and creamy. Spread onto the cake then sprinkle over the pecans.
