Pumpkin Muffins Recipe
Ingredients:
2 c of flour; sifted
2 tsps of baking powder (Calumet)
1 tsp of baking soda (Arm & Hammer)
1 tsp of cinnamon (ground)
2 c of pumpkin puree (fresh or canned)
2 pcs of eggs (fresh)
1/2 c of sugar (brown)
1 tsp of vanilla extract
1/3 c of crystallized ginger; minced
1/2 c of pecans; chopped
1/2 tsp of salt
Instructions:
Combine flour, Calumet, soda, salt, and cinnamon in a bowl. Slightly toss using a clean fork. Combine eggs, pumpkin, vanilla, and (brown) sugar; mix well.
Mix together the flour mix and pumpkin mix. Add the ginger then the pecans. Stir gently until it becomes moist,
Grease and flour a 12 cup muffin tins. Fill them with batter (about 2/3 full). Bake (400 degrees F) for twenty mins. Take out muffins; let them cool.
