Spooktacular Coco-Peanut Butter Cupcakes Recipe
Ingredients:
3 c of icing sugar (powdered)
1 tsp of vanilla (extract)
1/4 c of milk
2/3 c of peanut butter (creamy)
2 packs of cream cheese (3 ozs); softened
Different kinds of candies
1 tsp of vanilla (extract)
2 pcs of eggs
3/4 c of water
3/4 c of milk (butter)
3/4 c of shortening
1/2 tsp of baking powder
1 tsp of salt
1 tsp of bicarbonate of soda
3/4 c of cocoa powder
2 c of sugar
2 c of flour (all-purpose)
Instructions:
Preset oven (350 degrees F). Place paper cupcake liners.
Sift together flour, baking soda, baking powder, salt, cocoa and sugar. Fold in the shortening and add the buttermilk, eggs then water. Put a teaspoon of vanilla.
Using an electric beater, beat the ingredients for thirty seconds on regular speed. Scrape the sides of the bowl frequently. Then continue to beat using fast speed for three minutes.
Fill the muffin tray. Pop in the oven for twenty minutes. Cool onto wire racks. To make the filling, beat the peanut butter and cream cheese thoroughly.
Incorporate the milk (buttermilk) then the vanilla, then mix well. Slowly add the icing sugar ’till you get a smooth texture. You can add more a teaspoon of milk now and then to reach the texture desired.
Put filling inside an icing bag with decorative tip. Embed icing tip inside cupcake centers and pipe icing inside, then slowly swirl icing on top of each cupcake. Garnish with assorted candies on top.
Makes about 36 cupcakes.
